Caramelized White Chocolate Coconut Panna Cotta

This Panna Cotta recipe is super easy & delicious, and made with only three simple ingredients!
I decided to highlight the coconut flavors inside by adding just a few drops of the premium extra virgin olive oil by Athos Frantoio Traldi

Recipe

White Chocolate Coconut Panna Cotta

Ingredients:
250g Coconut cream 
50g White chocolate
2g agar-agar

Preheat oven to 160 degrees C
Roast the chocolate for 15min or until it starts to turn golden and caramelized.Set aside and let cool down.
In a small pot bring the agar, chocolate, and coconut cream, to a boil for 2 minutes.
Strain the pannacotta and pour in molds, I used the semi-sphere ones, and let set in the fridge.


Olive oil oats crumble

Ingredients:
50g Flour 
20g Sugar
35g Oats
25g Olive oil Athos Frantoio Traldi

Preheat oven to 170 degrees C
Mix all the ingredients and place on a tray with baking paper and cook 15-20 minutes, stir the crumble every 5 minutes till golden in color.


Lemon Jelly 

Ingredients:
100gr Lemon juice
10gr Sugar
2gr Agar-agar

Combine the ingredients in a stainless steel pot and whisk to a boil. Boil for 3 minutes and pour into a sprayed shallow pan to cool. This will set up hard -- almost like plastic. Cool for 2 hours. 


Strawberries

Ingredients:
100g strawberries
10g Demerara sugar
5g Lemon juice 

Cut the strawberries and add sugar and lemon juice then let marinate in the fridge.

Plating the dessert 
Place the pannacotta on the side of the plate, add the olive oil oat crumble.
Add on the crumble two spoons of strawberries, a spoon of strawberry juice and some lemon jelly to complete the plate. Decorate the plate with fresh baby basil leaves, and olive oil.
