Raw food technique only includes plant (based) and organic ingredients, with processing procedures that do not exceed 42°C in temperature to maintain the nutritional qualities and natural taste of the food you are preparing. 

The result is superior quality sweets, nutritious, healthy and with an extraordinary natural taste. Not to mention, it’s also a great way of respecting food and the environment.

Raw desserts can be a bit intimating for beginners but they are surprisingly simple to make.

I participated in an amazing course while in Rome specifically about raw pastry desserts with Grezzo and it opened my mind to a whole new world of dessert options and creativity.

I started experimenting with raw desserts and I was amazed at how a few simple ingredients could create endless flavour combinations with the most decadent and delicious tastes and textures. Better yet, there is quite a lot of room for trial and error since you can test and taste as you go. -This is totally different than most baking & allows beginners to make incredible raw desserts.

The fundamental ingredients in raw desserts are:

  1. A sweetener – often dates or other fruit purées

  2. Nuts – the base of most raw desserts.

  3. Fruit and/or veggies

  4. Seeds, cacao, coconut, and other mix-ins.

  5. Salt, spices, and extracts
