Raspberry Inspiration Crémeux

Ok, so today I’m going to spend some time telling you about the most incredible raspberry chocolate I’ve tasted yet!
A few weeks back, I had the opportunity to receive The Valrhona INSPIRATION range, and in particular, three different types of chocolates: Raspberry, almond and passion fruit!
I’ve been completely obsessed with Valrhona chocolate ever since I tasted it for the fist time.
Whilst working my old job at Basement Sate Dessert bar, my ex-pastry-chef-boss at the time created a delicious strawberry dessert using the strawberry infused flavour chocolate from the range range. Ever since seeing the possibility’s it offered me creatively, when I next had the chance to create a brand new dessert menu of my own, I made two brand-new desserts that revolved around this unique and delicious chocolate range!
Today’s recipe is a Raspberry inspiration cremeux. Aromatic, fresh, rich and super creamy with just the right hint of sharp raspberry to excite the palate!

Raspberry Inspiration Crémeux
Ingredients:
175g Raspberry purée
8g Glucose
3g Agar Agar
270g Raspberry Inspiration Chocolate
330g Whipping cream
Heat the Raspberry purée with the glucose and agar agar, for a about a minute.
Slowly pour the mixture over the Raspberry Inspiration Chocolate and mix with an immersion blender to make the perfect emulsion.
Add in the cold cream. Mix again.
Leave to crystallize in the refrigerator.
Note:
On this occasion, I preferred to use Agar Agar but you want can use gelatine if you like. substitute the agar with:
5g Powdered Gelatine
25g water
