Berry Frozen Yogurt
Frozen yogurt is one of my favourite ice cream.
It's light, refreshing, and has a lovely tanginess that isn't too overwhelming.
And while I love all kinds of frozen yogurt, berry frozen yogurt is my absolute favourite . The combination of sweet berries and tart yogurt is so addictive.
Berry Frozen Yogurt
(Makes 500g)
200g Greek Yogurt
75g Berry puree
100g Double Cream
75g Caster Sugar
50g Glucose syrup
0.75 Ice cream stabiliser
Mix the sugar with the ice cream stabiliser.
Place the cream, sugar mix , and glucose in a medium heavy-bottomed saucepan over medium-high heat and cook, whisking occasionally to discourage scorching, until it comes to a full rolling boil. Reduce the heat to a low simmer and cook for 2 minutes. Remove the pot from heat.
Immediately pour the base into a shallow metal or glass bowl. Working quickly, fill a large bowl two-thirds of the way with very icy ice water. Nest the hot bowl into this ice bath, stirring occasionally until it cools down.
When the base is cool to the touch, remove the bowl from the ice bath .
Add the yogurt and berry puree to the base, whisking until evenly combined.
Transfer the base to the refrigerator to cure for 4 hours, or preferably overnight.
Place the base into the bowl of an ice cream maker and churn according to the manufacturer’s instructions.
