Vegan Lime Sponge Cake

Vegan Lime Sponge Cake
Ingredients:
(Recipe for a 20x20cm square pan)
100g Vegetable oil
20g Coconut oil (melted)
180g Soy milk
100g Caster sugar
170g Plain flour
50g Cornflour
10g Baking powder
2g Baking soda
1/4 tsp salt (pinch)
Zest of 1 lime
Method:
1. Preheat oven to 160°C and line a 20x20cm baking pan with parchment paper.
2. Combine the wet ingredients, veg oil, coconut oil and soy milk into a large bowl.
Add salt lime zest and sugar to the wet ingredients and stir.
3. Into a small bowl, sift the dry ingredients: flour, cornflour, baking powder, baking soda. And add to the wet ingredients.
4. Add the lime zest and salt, then stir until completely combine.
5. Pour the batter into the pre-prepared pan, and bake for 25-30 minutes until golden in on the top, and when a toothpick inserted comes out clean.
6. Once cool, slice the cake 2cm thick and cut 2 rectangles for each dessert ( mine was 2x2x5cm and 5x4x2cm )
7. Store the rectangles on a tray and cover with cling film.
