Baked Peaches and Sake Granita
This granita is incredibly refreshing!
I wanted to put a unique spin on the classic peach granita by baking the peaches with basil and lemon, then adding a touch of sake.
The combination of sake and peaches creates a delightful and sophisticated flavor profile that’s perfect for summer.
You can use this granita as a component in your summer plated desserts, pairing it with fresh peaches and a yogurt mousse, or simply enjoy it on its own for a cool, refreshing treat.
Baked Peaches and Sake Granita
Baked Peaches:
250g peaches
50g caster sugar
Peel of half a lemon
50g water
2g vanilla paste
10-12 basil leaves
Preheat the oven to 200°C.
Cut the peaches and place them in a baking tray.
Add the caster sugar, lemon peel, water, vanilla paste, and basil leaves.
Mix everything with your hands to combine.
Bake for 15-20 minutes or until the peaches are completely cooked. Set aside to cool.
Baked Peaches and Sake Granita:
215g baked peaches
430g water (2 times the weight of the peaches)
50g sake liquor (or to taste)
Place the baked peaches with all their juice in a blender or jar.
Add the water and blend with a hand blender until smooth.
Add the sake and mix well.
Strain the mixture through a sieve.
Pour the strained mixture into a shallow tray and place it in the freezer.
Once frozen, use a fork to scrape the granita into fluffy crystals.
